Preparation time: 30 minutes

2 cups whole grain oatmeal
2 ripe bananas
2 tbsp chia + 6 tbsp water until it soaks (like a thick chia pudding)
1/2 lime zest and juice
A handful of raisins (soaked)
A handful of cashew nuts (soaked)
A handful of pumpkin seeds (soaked)
A pinch of salt
1 tbsp chopped fresh thyme (or dried)

Preheat it in the oven to 300F (150C). Peel bananas and puree them with a food processor or fork. Add in oats and mix well. Add all the other ingredients and mix everything well. Let it sit for 10-15 minutes. Form cookies on a baking tray lined with baking paper using a spoon and bake for ~ 30 min.

Healthy and easy to make. These cookies are sugar-free and dairy-free, and you don't have to use flour. And they are great for dessert, breakfast, or school lunch boxes.
