Instructions:

  1. Prepare the Raspberry Layer: In a medium saucepan, combine raspberries, lemon juice, 1/2 tsp of vanilla extract, and 2 tbsp of powdered sugar. Gently simmer until the raspberries begin to break down. Remove from heat, stir in chia seeds, and allow to cool completely for a thick, jam-like consistency.

  3. Assemble the Parfaits: Begin with a layer of the raspberry mixture in 5 oz glasses. Follow with a generous layer of whipped coconut cream. Repeat the layering if desired or if glass size permits.

  4. Garnish and Serve: Top each parfait with fresh blueberries and, if using, a mint leaf for an elegant finish. Allow the flavors to meld for a few minutes before serving, or chill to enhance the dessert's refreshing qualities.
