Ingredients:

  • 1/2 cup nut butter (such as almond or peanut butter)
  • 1/2 cup sunflower seeds
  • 1 1/2 cups shredded coconut
  • 1 scoop vegetable protein powder (such as pea or hemp protein)
  • 3 tbsp coconut oil, melted
  • 1/2 cup chia seeds
  • 1/4 cup cocoa powder, plus 3 tbsp for rolling

Instructions:

  1. Prepare Ingredients: In a food processor, combine the nut butter, sunflower seeds, shredded coconut, vegetable protein powder, melted coconut oil, chia seeds, and 1/4 cup cocoa powder.

  2. Blend: Pulse the ingredients until the mixture is well combined and sticks together when pressed. If the mixture is too dry, add a little more melted coconut oil to help it bind.

  3. Shape the Balls: Using a spoon, scoop out the mixture and roll into small balls using your hands. Each ball should be about 1 inch in diameter.

  4. Roll in Cocoa Powder: Place the remaining 3 tablespoons of cocoa powder in a shallow dish. Roll each ball in the cocoa powder until well coated.

  5. Chill: Arrange the coated balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow the balls to set and become firm.

  6. Serve or Store: Once set, the chia and protein energy balls are ready to be served. They can be stored in an airtight container in the refrigerator for up to one week.
