Ingredients:

  • 1 cup mixed seeds and nuts (choose a blend of your favorites such as almonds, cashews, pumpkin seeds, and sunflower seeds for a varied texture and nutritional profile)
  • 1/4 cup of your preferred nut butter (almond, cashew, or peanut butter work beautifully)
  • 4 Medjool dates, pitted and roughly chopped (ensure they are soft; if not, soak them in warm water for 10 minutes before using)
  • 1 tablespoon matcha powder for rolling

Instructions:

  1. Prep Your Ingredients: Begin by gathering your selection of seeds and nuts. If you prefer a smoother texture, you can lightly toast the nuts and seeds in a dry pan over medium heat for 3-5 minutes. This step is optional but can enhance the flavors.

  2. Blend: In a food processor, combine the mixed seeds and nuts, nut butter, chopped dates, and the tablespoon of matcha powder. Pulse the mixture several times until it starts to come together into a sticky, dough-like consistency. If the mixture seems too dry, you can add a teaspoon of water or more nut butter to help it bind.

  3. Shape: Once the mixture is ready, scoop out portions of the dough with a spoon or a small ice cream scoop. With damp hands (to prevent sticking), roll the mixture into balls, about the size of a walnut.

  4. Roll in Matcha: Spread some additional matcha powder onto a plate. Roll each ball in the matcha powder until it's lightly coated on all sides. This not only adds an extra layer of flavor but also creates a beautiful finish.

  5. Chill: Place the matcha balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes. This helps them set and firm up, making them easier to handle and more enjoyable to eat.

  6. Enjoy: Your Superfood Matcha Energy Balls are ready to be enjoyed! Store them in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
